Origins and Development
Buan County of Jeollabuk-do spearheaded over 50 special projects including five business units including the cluster operation of Buan mulberries and the founding of Buan Silkworm Town and the Buan Champpong Research Center. As a result, the county was assigned the title of “Special Buan Silkworm Town” by the Korean Ministry of Knowledge Economy in 2006. The county has since developed other food products utilizing Buan Champpong Mulberry as Buan’s Signature Food, such as pickled mackerel, beverages, tea made with mulberry and mulberry leaf. Buan Champpong Mulberry is a nine-time Grand Prize winner at the National Brand Awards in the mulberry category from 2011 to 2019.
Production Method and Characteristics
Mulberry Leaf Pickled Mackerel is dark fleshed mackerel pickled and aged in sea salt and mulberry leaf extract. It is made with sea salt from the eco-friendly Gomso Salt Farm and mulberry leaves cultivated in the Special Byeonsan Silkworm Zone. The fish is cut in half and washed first. Then, it’s pickled with brine-free sea salt and mulberry leaf extract, which is fully absorbed into the fish. This process removes the fishy odor unique to mackerel. The fleshy meat without the head is vacuum-packed, making it easy for anyone to cook the fish. Rich in protein, calcium and iron, mulberry leaves help strengthen bones. The fiber in mulberry leaves help the body discharge toxins and ease bowel movement. Mackerel is a variety of fish that is rich in vitamins, amino acids, and highly unsaturated fatty acids. EPA is known to deter arteriosclerosis, cerebral stoke, vasodilation, and platelet aggregation, as well as lower high blood pressure and fat buildup in the blood stream; and DHA helps brain function and deters Alzheimer’s disease. Regular intake of this highly nutritional, fatty fish promotes bone and brain health and combats aging, xeroma (dry-eye syndrome), anemia, and vascular disease, among other benefits.
